We follow Laruffa’s recipe, a natural recipe, without chemicals or preservatives and prepared together with sweets, delicious morsels of dried fruit stuffed with walnuts and licorice powder.

Ingredients

  • Fresh ripe and healthy figs (as many as we want)
  • Walnut kernels (how many are enough to stuff the figs we have collected)
  • Water
  • Brown sugar
  • Licorice powder
  • A large tray
  • On a retina

Preparation

  1. Clean the figs delicately. I avoid putting them under water to avoid creating humidity, so I clean them with a soft sponge.
  2. Dry with a clean tea towel.
  3. Cut in half lengthwise, without detaching them.
  4. Arrange them on the tray lined with parchment paper, and expose them to the sun by turning them 2/3 times a day. Cover them with a net to keep insects away.
  5. Pick them up at sunset to prevent them from absorbing moisture overnight. The following morning, expose them to the sun again.
  6. The figs will be ready after about 4/5 days, they will have lost their humidity and will be darker and withered.
  7. At this point pass each fig previously divided in half in the Licorice Powder and stuffed with walnut kernels.
  8. Close the fig split in half, reassembling it and then placing it on a baking sheet lined with parchment paper.
  9. To make them more delicious, caramelize them lightly: In a bowl add a few tablespoons of water or licorice liqueur, dissolve a pinch of brown or granulated sugar and a pinch of licorice powder, mix everything well. Brush the surface of the figs abundantly and cook for about 15 minutes in a preheated oven at 180º (they must brown).
  10. Store the dried figs in a glass jar.
