Spaghetti with Pumpkin, Nduja and Licorice

Here is the ideal recipe to warm up the winter … and your guests. A tasty and spicy first course, easy to prepare: Spaghetti with Pumpkin, Nduja and Licorice powder. Let’s find out the recipe of Francesca Laruffa who cooked them for us!

Ingredients for 4 people

  • 400 g Spaghettoni
  • 1/2 Onion
  • 400 g of yellow pumpkin
  • Olive Oil
  • 120 g of Pecorino Cheese
  • 120 g Nduja
  • Salt
  • 1 tablespoon of Amarelli Licorice Powder

Preparation

  1. Cut the Pumpkin into cubes and brown it in a pan with the Onion and Evo Oil
  2. When cooked, set aside a few cubes of Pumpkin
  3. Mix the rest of the mixture with the ground Crotonese and a pinch of salt
  4. In the same pan used before, melt the Nduja over low heat
  5. Drain the spaghetti a few minutes before and finish cooking them in a pan together with the Pumpkin cream, the Nduja and a few tablespoons of cooking water
  6. We serve adding a drizzle of raw oil, diced pumpkin and a sprinkling of Licorice Powder
