Ingredients for 2 people

 

  • 160g Carnaroli rice
  • 500 ml Vegetable broth
  • 1 Mango
  • Fresh and blast shrimp
  • Licorice
  • Extra virgin olive oil
  • White wine
  • Clovers for decoration
  • 1 tablespoon of Amarelli Licorice Powder
  • Salt and pepper

Preparation

  1. Prepare the Liquorice oil: put extra virgin olive oil in a blender with a scant spoon of Amarelli Licorice Powder.
  2. Clean the blast shrimp, sprinkle with the licorice oil and set them aside
  3. Heat the oven to 180 degrees
  4. Place the mango cut into small cubes of about 1 cm, lightly salted, in a parchment paper bag, then wrapping it with aluminum paper
  5. Bake it in the oven at 180 degrees for 40 minutes
  6. When cooked, set aside a few tablespoons of mango cubes and blend the rest to obtain a smooth and shiny puree.
  7. Toast the rice dry and when the grain is hot, blend with aromatic white wine and cook with the fumet
  8. Shell and clean the shrimp
  9. Stir in licorice extra virgin olive oil and ground black pepper, the mango puree, the mango cubes and a part of the previously peeled and cleaned prawns.
  10. Serve as in the photo, accompanying with some fresh shrimp and decorating with clovers.
